NUTR 240 Nutrition
This introductory course provides a broad understanding of fundamental human nutrition
including the basic four food groups and essential nutrients as well as dietary recommendations
and guidelines. Students will study influences on food choices, including food environment,
food supply, food access and food safety. The relationship between nutrition and physical fitness
along with influences of social determinants of health and health disparities on food access,
quality of life and disease patterns will be explored. Diabetes mellitus and its impact on the
American Indian population will be analyzed.
